My experience working in restaurants, at one of the best PR shops in town and as a freelance journalist for publications such as WSJ. Troutbeck

History at Troutbeck runs deep. Built in 1765, Troutbeck has hosted Mark Twain, Henry David Thoreau and Ralph Waldo Emerson. Its second owners, Joel and Amy Spingarn, were also literary supporters of the arts, drawing the likes of Sinclair Lewis, Ernest Hemingway and Lewis Mumford, as well as hosting two seminal early meetings of the NAACP, known as the Amenia Conferences. W.E.B. Du Bois, Langston Hughes, Zora Neale Hurston and Thurgood Marshall, were frequent guests. Now, reimagined as a stately 37-room estate hotel, it’s a pleasure to lead culinary special programming, such as our Guest Chef and Guest Beverage Residencies, and to support great producers in the Hudson Valley and beyond. Thai Diner

From the Uncle Boons team, Thai Diner is an all-day-into-night Thai-American diner at 380 Mott St. at Kenmare in Nolita that opened exactly two weeks before Covid-19 lockdown. This truly one-in-a-million team of chef-restaurateurs and their extremely loyal staff have fought through 2020’s challenges to keep this young restaurant going strong under the most difficult conditions. The Thai-American fare that they are putting up all day everyday meets the high bar that beloved and much missed Uncle Boons set. I feel so lucky to know Ann Redding and Matt Danzer and to have worked with them for this incredible opening. May 2021 bring health and ease for us all so that we can gather in this visionary place. 🇹🇭

The Metrograph Commissary

Filmmaker and visionary Alexander Olch created stylish downtown Manhattan theater Metrograph to re-instill some much-needed glamour and sophistication into the movie-going experience. I worked with Alex to create Metrograph’s onsite restaurant, The Commissary, inspired by the restaurants on Old Hollywood studio lots where stars sat beside stage hands to eat their daily meals. Consulting on the opening included everything from selecting the cutlery to service training for the staff, and working with chef Dennis Spina on the menu to make it the perfect reflection of Alex’s vision, as well as all press communications around the Metrograph Commissary’s opening.
